Weather.com says we're getting snow... 8-12in?!

If you live anywhere from Virginia to the edge of NYC, last night was probably a zoo at the grocery store.  A few coworkers of mine were telling me how long (and angry) lines were for parking and checkout lines, stores barely had time to put food out for shoppers, and so many of the shelves were empty.

It’s craziness, people!  It’s the northeast, you should be used to a foot of snow being dropped on you, and it’s not that scary!  And why go shopping-crazy if no one is going to be able to come out on Superbowl Sunday?

Oh well, I am avoiding the stores for now, will probably will go out Sunday if the snow slows down and it’s clear enough to venture out.  Maybe.  I’ve been asked for the buffalo chicken dip again, if I do go out!  ^_^

For now, we’ve got plenty of the casserole left over, last I saw, and still have greenbeans amandine to make (yum!) and our reserved frozen pizza and pasta meals incase we’re stuck or lazy.

Well, that was a spicy casserole!  I ended up adding a few cloves of garlic and some cayenne pepper to bring out some heat with the curry.

It was very good, and now we’ve got lunch for the rest of the week.  ^_^

Leftovers for a new meal

So, as planned, tonight will be Wild Rice and Chicken Curry casserole!  Finally, I have a night home with enough time to make it!  It’s a good night to be doing so, since Eric has plans for the early evening, and I need to keep myself busy until LOST starts up again tonight!

As for last night, I was disappointed with the result, but I think its easily my error on the temperature and time to cook.  But after cleaning up from the meal, I was cleaning the white ramekins that were holding the onions up and there was all of this fond on the bottom from the drippings coming out of the foil… I felt guilty just washing it away!  I got to thinking that maybe we should try French Onion soup soon!  I’ve seen a few recipes for it and it’s definitely on my to-do list!

I just can’t do it as a main course though, I guess Eric didn’t like having *that* much onion for one meal!

I’m sitting here boiling away with a fever at work, not the greatest feeling in the world.

But… here are my furballs who kept me company while I napped away the day… These are my cuties, both around a year old (not from the same litter) with very similar markings!

Zeno’s the big one on the left (getting pudgy!) and Cali on the right, she’s tiny as anything and she’ll probably stay that way.

Frozen ju from French Chicken in a Pot

Also, yesterday I took the left over ju from the French Chicken in a Pot and preserved by freezing it in an ice cube tray and saving it in a ziplock bag in the back of the freezer!  Now when we cook chicken breasts that we often have frozen we can just heat these cubes up and pour it over when it’s time to serve! Mmm left over happiness!

Also got to catch up with my Mom on the phone… gushed about my first successful whole bird I’ve cooked!  And all the recipes I’m pondering and such…

As I may have mentioned before, one of my last few visits home ended up with the two of us in the kitchen cooking a late night dinner of pepper steak and green beans and wild rice…  It as so much fun, I look forward to doing that again soon!

Also, last night I got a nice complement from Eric, he said that he’s been enjoying my cooking (with a bit of his help!) and he’s said he’s just felt better, and aside from his workout routine, he’s felt a bit lighter too!  Surprising to me, considering how much butter seems to end up in nearly every dish! But *yay!* A happy Eric and family means a happy me. (“aww…”)
