Zeno napping the entire day away

I am *trying* to get myself back on track, but since the snow storms I have really been just all over the place!

It may be needless to say, but lately I’ve felt like Zeno, wanting to rest, but feeling restless at the same time!

Anyway, here’s a basic summary of the other week:

Saturday I made my own version of Boston Creme cake, while cute, they weren’t as good as the box mix I had from Stone Wall Kitchen I made before.

On sunday I made french toast with Nutella and bananas for Eric, and then had a fantastic dinner out at Victory Brewery!

This past week has been a very busy one, we have had some impromptu plans and family and friends in town (surprise bridesmaids’ dress shopping!) and Eric has been battling a cold.

This past Friday I had announced that I will be changing jobs, so that’s also been on my plate.  It’s going to change things a bit, since the hours I work will extend further into the evening by a bit, but hopefully we’ll find a way to make it all work!  I’m sad, but excited to for the change… and now I’ll be able to make more big meals with the intent of having some good leftovers for lunch, since my new job will be only minutes away!

Coming up this week is a stir fry dinner, with a Pineapple and ginger sauce I picked up from StoneWall Kitchen ^_^ yum!

strawberry, orange and banana smoothie

The first half of the day I had such a sore throat and felt like I couldn’t speak.

Tired of my tea and toast regimen, I went out earlier and got some more cold meds. I got some OJ, came home and made a fruit smoothie from frozen strawberries, a banana, and the pineapple OJ, ice and a small scoop of ice cream…

Needless to say, even though it was a very small smoothie I made, I’m feeling incredibly full, but also feeling much better.  Each fruit has plenty of vitamin C (yes, even bananas!) so I’m sure it’ll help!

Ingredients for a large smoothie:
3/4 cup frozen strawberries (with sugar)
1 banana, cut into smaller pieces
1 cup orange juice (I prefer pineapple/orange juice!)
3-4 ice cubes
1 medium scoop of ice cream (optional to make it more creamy)

Directions:
Drop all ingredients into the blender and pulse to crush the ice and banana then puree until smooth.
